INGREDIENTS 1 cup water 2 cups raisins 3/4 cup shortening 1/4 cup butter 1 3/4 cups sugar 2 eggs, slightly beaten 1 teaspoon vanilla extract 3 1/2 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon salt 1/2 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1/4 teaspoon ground ginger 3/4 cup chopped walnuts DIRECTIONS 1. In a small saucepan combine water and raisins; bring to a boil. Cook for about 4 minutes; remove from heat and set aside to cool. In a large mixing bowl, cream shortening and butter with sugar. Beat in eggs and vanilla. 2. In another bowl, stir together dry ingredients, including spices; gradually add to creamed mixture, blending well. Stir in chopped nuts and raisins (don’t drain). Drop raisin cookies onto greased cookie sheets about 2 inches apart. 3. Bake at 350° for 12 to 15 minutes, or until cookies are done. Makes about 5 dozen raisin cookies.
